Wassail Punch

Wassail has been a holiday drinking classic for ages, and for good reason. Below, Jerry Slater of Atlanta's H. Harper Station shares his take on the punch. (Note: He recommends Rare Wine Company Madeira and Benziger Chardonnay.)


  • 4 ounces Malmsey Madeira
  • 4 ounces St. George Spiced Pear Liqueur
  • .5 ounce Allspice Dram
  • 750 milliliters Chardonnay
  • 2 ounces Demerara Syrup (or to taste)
  • 1 small pinch freshly grated nutmeg
  • 1 pear, thinly sliced


Mix Madeira, pear liqueur, allspice dram, chardonnay and syrup in sauce pan. Stir gently. Heat until mixture is warm. Pour into punch bowl and serve immediately or keep warm on stove or in a crock pot. Garnish wassail with thinly sliced pears and cinnamon sticks. To serve, ladle into heat-proof glasses and grate fresh nutmeg on top.
