"This drink is a riff on another cocktail called the Sweet Olive, which hails from the beloved Brooklyn restaurant Franny’s. Keneniah Bystrom created the Safe Passage to guide his restaurant through a party in honor of Franny’s recently released cookbook. Swapping the Sweet Olive’s Meletti Amaro for Amaro Nardini — which is infused with bitter gentian and fresh peppermint — Bystrom created a softly bitter spritz whose salty complexity matches the sweet citrus of Aperol and the bitter twinge of Nardini." — from "Spritz: Italy’s Most Iconic Aperitivo Cocktail, with Recipes" by Talia Baiocchi and Leslie Pariseau.
