Pickering Place

Pickering Place pays homage to a once-popular dueling site in London with a dual serve of contrasting cocktails. At the American Bar, the drinks are served atop a wooden box, inside of which plays a silent black-and-white film.

This drink, from the American Bar at the Savoy, pays homage to London's smallest square (which also happened to be a popular venue for dueling) with a double serve of contrasting cocktails: the Elegant, with gin, Cocchi Rosa, Campari and egg white; and the Bold, with whiskey, Fernet Branca Menta, Byrrh and coffee.

Directions

1. The Elegant

  • 50 mL Bombay Sapphire
  • 15 mL Cocchi Rosa
  • 10 mL Campari
  • 30 mL lemon juice
  • 1 dash egg white
  • 15 mL saffron syrup
  • champagne, to top

Combine all ingredients (except champagne) and shake. Strain into Chantilly glass and top with champagne. Garnish with dehydrated raspberries and saffron.

2. The Bold

  • 45 mL Jack Daniels Single Barrel Whiskey
  • 10 mL Fernet Branca Menta
  • 25 mL Byrrh
  • 3 drops Peychaud's
  • 5 mL sugar syrup
  • 5 grams coffee

Press all ingredients over an Aeropress and stir with ice. Serve in a large goblet with absinthe spray on the glass and orange peel garnish.
