Green Strawberry Caipirinha

  • 2 ounces orange cachaça
  • 34 ounce green strawberry syrup
  • 34 ounce arugula juice
  • 4 lime quarters
  • 2 slices green strawberries


Add lime quarters and strawberry syrup into cheater tin and muddle. Add remaining ingredients with ice and short shake. Pour all ingredients into rocks glass.

Orange cachaça

Add all ingredients into vacuum bag and seal. Let circulate in sous vide bath at 62F degrees for 1.5 hours. Allow to cool, pass through cheesecloth and bottle.

Green strawberry syrup

  • 2 cups sliced green strawberries
  • 2 cups sugar
  • 16 g fresh tarragon
  • 4 oz Boomsma Cloosterbitter
  • ½ tsp absorbic acid

Add all ingredients into vacuum bag, seal and allow to sit for 2 hours. Add ingredients to blender with 1 cup of water. Blend until smooth and strain.

Arugula juice

  • 160 g arugula
  • 200 g ice
  • 1 cup water
  • ½ tsp ascorbic acid

Add all ingredients and blend until slightly smooth. Strain through cheesecloth.
