Carol of the Bells was created by Christina Mercado of Grace Vanderbilt for our Barenjager Holiday Cocktail Competition. Here's what she had to say about it: "For this holiday season we decided to highlight traditions around the world by crafting a special cocktail menu inspired by those traditions. We had Coquito, mulled wine, even a 12-grapes inspired cocktail. This cocktail - Carol of the Bells was inspired by the Jamaican Sorrel Punch. The blend of hibiscus, honey and sweet spices creates a bright and festive drink that makes us all say, “throw cares away, Christmas is here, bringing good cheer!”

Ingredients

  • 1 ounce Barenjager Honey Liqueur
  • 1 ounce Gosling’s Dark Rum
  • 1 ounce Thomas Tew Rum
  • 1 ounce Hibiscus Tea*
  • .25 ounce Ginger Liqueur
  • .25 ounce lime juice

Directions

  • Shake all ingredients with ice. Strain over fresh ice into snifter rimmed with decorative sugar. Garnish with honey snowflakes and gold stars.

Sub-recipes

*Hibiscus Tea

  • 16 oz water
  • 1 Tbsp hibiscus leaves, dried
  • 1/2 tsp cloves
  • 2 pcs star anise
  • 1/2 cinnamon stick
  • 1 tsp allspice, whole
  • bring water to a boil with hibiscus leaves. Remove from heat and add spices. Allow to cool to room temperature. Strain and chill before use.

Honey Snowflakes

  • Wafer snowflakes
  • Barenjaeger honey Liqueur
  • with a wide paintbrush, gently brush wafer snowflakes with Barenjager Honey Liqueur. Place on silpat and allow to dry overnight.
